The Founder

FROM A BACKYARD GRILL TO A FLATTOP

It started with a cheap cast-iron press and a Sunday obsession. Our founder, Marcus, spent years chasing the perfect smash — that lacy, caramelized crust you only get when fresh beef hits a screaming-hot flattop.

Friends kept turning up "just to say hi" around lunchtime. Then strangers. The backyard couldn't keep up. So we found a small corner unit in Shoreditch, knocked the wall down to open the kitchen, and decided we'd only ever do one thing — and do it properly.

No freezers. No heat lamps. No shortcuts. Just prime chuck, a hot griddle, and a queue that tells us we're doing it right.
